In this course, students will learn to plan menu, supervise and assign duties to the staff within the station and supervise arrangements of function rooms for special events. On completion of the course, students should be able to check the general cleanliness and condition of the furniture, linen, cutlery, chinaware, glassware, stores and lightings; take and serve food and beverage orders; prepare alcoholic and non-alcoholic beverages; provide tableside service; assign duties and supervise staff within the station; maintain stock; handle room service orders; handle guest relations; monitor delivery of service within the station; make sales presentation to guest; prepare event order; and supervise arrangements of function room for special events. Graduates with a GPA of 2.8 and above may also apply for progression to related Higher Nitec courses offered by ITE. Nitec in Food and Beverage Operations graduates are employed by establishments in restaurants and food and beverage outlets in hotels. There are excellent opportunities for career advancement to supervisory positions and beyond. The challenge is for students to prepare themselves by upgrading their technical skills and knowledge through higher-level courses.
