I am currently a senior year undergrad student in Civil Engineering from Mumbai university and I plan to specialise in Airport Management and/or Development. Since my BE degree isn't very relevant to the field but I researched a few universities like Vaughn College of Aeronautics, NY and Florida Institue of Technology which offer MS courses in Airport Management irrespective of the undergrad field. I would like to know what are my chances?

You are right there are few Universities who accepts profile from irrelevant field for Airport Management, but as you have mentioned the Universities who accepts application even if the Bachelors is from irrelevant field. You will have a very good scope of getting admission if you mention your best interests in SOP (statement of purpose) for this course, why you want to study this? Why you want to choose this so and so University for this.
Rest all depends on your academics and if you have ever done any project or have and participation.
