What will I learn?

New Zealand’s booming hospitality industry is crying out for chefs with a range of skills. Take your cooking skills to the next level and you’ll go places!

In this one-year culinary arts course you'll get plenty of hands-on experience to advance your culinary talents.

You'll spend four weeks on placement as part of a real-life kitchen team and we team you up with other hospitality students to plan, organise, prepare and run events on campus for invited guests.

You'll also learn introductory management skills, such as planning and costing menus, and find out about product development, innovation, design and marketing.

Upon successfully completing the requirements you'll receive the award of:

  • New Zealand Diploma in Cookery (Advanced) (Cookery) (Level 5)

Entry requirements

For students from United States

For certificate and diploma programmes at Levels 5 and 6, all international students must have: NCEA Level 2 with passes in English/ Te Reo M?ori or education achievement, at least equivalent to NCEA Level 2, and a minimum of 42 credits at Level 3; Or equivalent; Provide evidence of ability to complete academic requirements for the program. Applicants must meet the English language requirements: Level 5: IELTS Academic score of 5.5 with no band score lower than 5; TOEFL Internet-based test (iBT)- Score of 46 (with a writing score of 14); Cambridge English Qualifications- B2 First or B2 First for schools with a score of 162. No less than 154 in each skill; OET- Minimum of Grade C or 200 in all sub-tests; PTE (Academic) score of 42 with no band score lower than 36. Level 6: IELTS Academic score of 6 with no band score lower than 5.5. TOEFL Internet based test (iBT) - Score of 60 (with a writing score of 18); PTE (Academic) score of 50 with no band score lower than 42; OET- Minimum of Grade C or 200 in all sub-tests; Cambridge English Qualifications- B2 First, or B2 First for schools, or C1 Advanced, or C2 Proficiency with a score of 169. No less than 162 in each skill.

For international students

You must:

  • hold the New Zealand Certificate in Cookery (Level 4) or an equivalent qualification as approved by relevant department staff, OR
  • be able to demonstrate equivalent knowledge and skills in culinary arts to the relevant department staff.

Other Considerations

You'll need to confirm you have the physical capability to safely withstand 4?8 hour sessions of working in the commercial kitchen environment.

Due to health and safety factors and space constraints, which restrict the number of students who can be accommodated in the commercial kitchens, limits on numbers may be imposed on this course.

English language requirements

IELTS Academic score of 5.5 with no band score lower than 5.0; TOEFL Internet-based Test (iBT) score of 46 (with a writing score of 14); TOEFL Paper-based test (pBT) score of 550 (with an essay score of 5 TWE); Cambridge English Qualifications: B2 First or B2 First for schools with a score of 162. No less than 154 in each skill; OET: Minimum of Grade C or 200 in all sub-tests; PTE (Academic) score of 42 with no band score lower than 36.
