What will I learn?

In this course you'll further expand your baking knowledge and discover how to make artisan breads, advanced danish pastries and delicious patisserie items. The diploma also focuses on special decorative techniques like mirror glazing, chocolate spraying, and chocolate tempering as well as how to bake beautiful tortes, eclairs, and layered cakes.You'll learn practical workplace skills too, like how to take charge in a baking environment and supervise others. At the end of the course, you will be ready to apply for advanced baking jobs, work in product development, or even become a supervisor. Entry requirements

For international students

  • Completion of New Zealand Certificate in Baking (Generalist) (Level 4), OR
  • Equivalent industry experience

If you do not meet the academic requirements you may be given special admission if Toi Ohomai staff are satisfied you are capable of successfully completing the requirements.

Special admission may also apply for applicants over 20 years.

*There may be different IELTS requirements depending on your chosen course.
